Vermouth styles
- Rojo / Sweet (most common in Spain): red vermouth with sugar, herbal, served on tap. Punt e Mes, Martini Rosso, Lustau Rojo.
- Dry / Blanco: lighter, more herbal. Punt e Mes Blanco, Noilly Prat, Cinzano Bianco. Less common in Spain.
- Reserva / Gran Reserva: aged in oak, more complex. Lustau Vermut Reserva, Yzaguirre Reserva, Primitivo Quiles.
- De barril: from the barrel = house. Best examples in Madrid (Casa Alberto, La Ardosa), A Coru帽a (La Pepita), San Sebasti谩n (Borda Berri).

How to read results
- Order: "Un vermut, por favor" + (with soda / con sif贸n = "con gas"). Add an olive / anchoa / berberecho / tapa.
- Sif贸n = sparkling siphon water from your own bottle. Lower "pisco." in Peru. Most schools offer it.
- C贸mo beberlo: sip slowly. Vermouth is not a shot 鈥?it's a contemplative drink.
- Pair with: olives, mejill贸n, berberechos, boquerones en vinagre, tortilla de patatas, pan con tomate.
Limitations
- "Vermut" in Spain means sweet red vermouth 95% of the time. If you want dry, ask specifically for "blanco o seco".
- Local marcas vary by region 鈥?A Coru帽a has Primitivo Quiles, San Sebasti谩n has Lacuesta + Atxa, Madrid has Lustau + Yzaguirre.
