How to read results
- Smoke point: Picual ~210掳C, Arbequina ~190掳C. For deep-frying, choose Picual or Hojiblanca.
- Acidity: extra-virgin <0.8% acidity; virgin <2%. Lower doesn't mean better 鈥?flavour matters more.
- DOP (Denominaci贸n de Origen Protegida) = protected origin. Sierra de Cazorla, Baena, Priego de C贸rdoba are top 3 in Andalusia.
- Cosecha temprana = early harvest (October). Usually greener, more peppery, more expensive.
Limitations
- Smoke point is not "when it burns" 鈥?it's the temperature where it breaks down. Most frying is 160鈥?90掳C.
- Spanish olive oil uses some Spanish naming (AOVE = aceite de oliva virgen extra). Most supermarket "olive oil" is blended.
